To make a five-ingredient pumpkin pie fudge, mix 1/2 cup coconut butter, 1/4 cup plus 2 tablespoons pumpkin puree, 3 tablespoons maple syrup, 2 tablespoons creamy almond butter, 2 teaspoons pumpkin pie spice and a pinch of fine-grain sea salt in a saucepan. Whisk constantly until all ingredients are blended, about 3 to 5 minutes. Grease a 3-inch by 5-inch or 4-inch by 6-inch container with coconut oil. Pour the mixture into the container. Even out the mixture by dropping it onto the counter a few times. Freeze for 1 hour. Turn over the container to remove the block of fudge, and then cut into 12 to 16 pieces. Store the finished fudge in the refrigerator.
To make peanut butter pumpkin fudge, line an 8-inch by 8-inch pan with foil and spray with nonstick baking spray. Combine 4 cups white chocolate chips and 1/2 cup peanut butter in a microwave-safe bowl. Heat on 50 percent power for 1 minute. Stir and continue heating in 30-second increments until the mixture is creamy and fully melted. Then, stir in 2/3 cup pumpkin puree, 2 teaspoons pumpkin pie spice and 2 teaspoons vanilla. Pour into prepared pan, and let it cool.
