An easy pumpkin bar recipe requires 2 cups of Bisquick mix, 2 cups of sugar, 1 can of pumpkin puree, 4 eggs and 1/2 cup of vegetable oil. Fold in 2 teaspoons of cinnamon, 1 teaspoon of baking soda and 1/2 cup of raisins.
Pour the pumpkin bar batter into a greased baking sheet, and bake at 350 degrees Fahrenheit for 25 to 30 minutes. While the bars bake, cream together a 3-ounce package of softened cream cheese, 1/3 cup of softened butter, 1 tablespoon of milk, 1 teaspoon of vanilla and 2 cups of powdered sugars. Spread the cream cheese frosting over the cooled pumpkin bars.
Make another easy recipe by beating 4 eggs, 1 2/3 cups of granulated sugar, 1 cup of vegetable oil and a 15-ounce can of pumpkin together. Mix in 2 cups of sifted all-purpose flour until well blended, then stir in 2 teaspoons of baking powder, 2 teaspoons of ground cinnamon, 1 teaspoon of salt and 1 teaspoon of baking soda. Once the batter is smooth, pour it into a greased baking pan. Cook at 350 degrees Fahrenheit for 30 minutes. Top the bars with icing made from an 8-ounce package of softened cream cheese, 1/2 cup of softened butter, 1 teaspoon of vanilla extract and 2 cups of confectioners' sugar.
