To make an easy peach cobbler using Bisquick, try Classic Bisquick Peach Cobbler with the crust on the bottom. Alternatively, another peach cobbler recipe provided by Bisquick is slightly more complicated but places the batter on top of the peaches.
To make the Classic Bisquick Peach Cobbler, mix 1 cup Bisquick, 1 cup milk and 1/2 teaspoon of nutmeg in an ungreased 8-by-8 square baking dish. Blend in 1/2 cup melted butter or margarine. In a separate bowl, mix 1 cup sugar with 1 29-ounce can of sliced peaches, drained, and pour the peaches evenly over the batter. Bake the cobbler in a preheated oven at 375 degrees Fahrenheit for 50 to 60 minutes or until it is golden brown.
For peach cobbler with the crust on top, combine 1/3 cup sugar with 1 tablespoon cornstarch and 1/4 teaspoon ground cinnamon in a 4-quart saucepan. Add 6 cups of peeled, sliced peaches, 2 tablespoons water and 2 teaspoons lemon juice. Stirring constantly, bring the mixture to a boil. Then boil and stir it for 1 minute more. Pour the mixture into an ungreased 2-quart square glass baking dish. Mix 1 cup Bisquick, 1 tablespoon sugar, 1/3 cup milk and 1 tablespoon melted butter or margarine in a medium bowl until a soft dough forms. Drop the dough in 6 tablespoonful increments onto the hot peach mixture. Sprinkle the dough with 1 tablespoon sugar. Bake at 400 degrees Fahrenheit for 20 to 25 minutes.
