To make easy creamed corn, heat ingredients including corn kernels and milk until the mixture thickens and is heated through. Creamed corn should take up to 25 minutes to cook and is served immediately.
One of the easiest ways to make creamed corn is to use cream cheese. Cook 2 ounces cream cheese and 2 tablespoons milk in a medium saucepan on medium heat. Once the cheese is melted, stir in 1 can cream-style corn and 10 ounces corn kernels. Cook for four minutes, stirring occasionally, and serve sprinkled with 1/2 cup shredded cheddar cheese and 1/3 cup sliced green onions.
Alternatively, melt 1/3 cup butter over medium heat. Stir in 1/3 cup all-purpose flour until smooth. Add 1 cup whipping cream, 1 cup milk, 1/4 cup sugar, 1 teaspoon salt and a dash of pepper. Bring the mixture to a boil, and cook for two minutes, stirring occasionally. Add 5 cups corn kernels, and heat through. Transfer the mixture to a broiler-proof dish, sprinkle with 1/4 cup Parmesan cheese and broil for three to five minutes.
Another easy recipe is to use fresh corn. Mix 2 1/2 cups fresh corn kernels, 1 tablespoon flour and 3 tablespoons butter, and transfer to a large skillet. Cook over medium heat for five minutes, stirring often.
Add 1 cup heavy cream, and continue cooking for another 10 to 15 minutes. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper.
