To prepare the bean dip, mince four cloves of garlic and enough cilantro to make up 1/4 cup. Drain and rinse two 14-ounce cans of low-sodium black beans, and pour them into the bowl of the food processor. Also add 3/4 cup salsa, the minced garlic, 2 teaspoons fresh lime juice, 1 teaspoon ground cumin and 1/8 teaspoon salt. Pour in 1 teaspoon water, and process the mixture until smooth. Toss in the minced cilantro, and process just until mixed. Transfer the black bean dip to a serving bowl, and serve alongside raw vegetables, multigrain crackers or tortilla chips.
Try different types of salsa to change the flavor of the bean dip, such as a zesty salsa for a spicier dip or a peach salsa for a fruity touch.
