To dehydrate bananas, peel the bananas and slice them into even pieces, adding them to a bowl. Spray lemon juice onto the banana pieces and toss to coat them evenly. Place them on dehydrator trays and set the dehydrator to 130 degrees. Dry for between six and 12 hours, occasionally rotating the trays so the bananas dry evenly. They feel like leather when they are completely dry.
Alternatively, slice the bananas very thinly and place them in a bowl. Add 3 tablespoons of lemon juice and enough water to cover the bananas, then remove them from the water and drain on a paper towel. Cover a cookie sheet with parchment paper and place the sliced bananas on it. Bake them at 170 degrees for five hours, turning them over halfway through. Turn off the oven and let the banana chips sit inside it overnight.
As an alternative, mix 3 cups of water and one cup of sugar and warm it. Add 1 cup of honey and mix. Dip sliced bananas into the mixture and spread them on a screen. Leave them out in the sun for two to four hours, turning them over when they are half dried. Bring the screens in at night to prevent the bananas from getting wet.
