Southern Living featured an extremely popular version of slow cooker cornbread dressing that is a classic set-and-forget side dish. This recipe takes four to six hours to cook in a slow cooker.
In a large bowl, combine 5 cups of crumbled cornbread and 14 ounces of herb stuffing mix with 2 cans of cream of chicken soup, 2 cans of chicken broth, 1 large sweet onion, diced, 1 cup diced celery and 4 large eggs. Stir in 1 tablespoon of rubbed sage and 1/2 teaspoon of pepper. Pour the cornbread mixture into a lightly greased 6-quart slow cooker. Cut up 2 tablespoons of butter, and dot the top of the cornbread mixture. Cover, and cook on low for four to six hours, or until cooked through. After the dish is cooked, reduce heat to warm until serving time.
Southern Living also offers a twist on the classic slow-cooker cornbread stuffing. For sausage apple cornbread dressing, cook 16 ounces of ground pork sausage in a large skillet over medium-high heat, stirring often. Cook until meat is crumbled and no longer pink. Drain the pork, and add to the classic slow cooker cornbread dressing along with 2 diced granny smith apples before cooking.
