The sauce for the duck requires 3 tablespoons of unsalted butter, 1 tablespoon each of chopped shallots and flour, 1 cup each of chicken broth and ruby port, 1 star anise, 3 tablespoons of fig spread and 1 teaspoon of lemon juice.
Wash and pat dry the duck. Season the outside and inside of the duck with the salt. Pierce the skin of the duck all over with a fork. Avoid piercing the meat of the duck with the fork. Place a rack inside a roasting pan. Put the duck, breast side down, on the roasting rack.
Cook the duck for two hours at 250 degrees Fahrenheit. Turn the duck onto its back and cook it for an additional 20 to 30 minutes at 350 degrees Fahrenheit or until the internal temperature of the duck is 165 degrees.

Pour in the broth, port and star anise and whisk the ingredients together. Simmer the ingredients until they thicken, and then add the fig spread. Add the salt, lemon juice and pepper. Cook the sauce thoroughly. Pour the sauce over the duck.
