One recipe for cranberry JELL-O salad with walnuts comes from AllRecipes.com and features fresh fruit. Ingredients include red or Golden Delicious apples, navel oranges and chopped walnuts.
To make cranberry JELL-O salad with walnuts, dissolve a 6-ounce package of cherry-flavored JELL-O gelatin mix in 1 1/2 cup boiling water in a bowl. Stir in 2 14.5-ounce cans of whole-berry cranberry sauce. Refrigerate the mixture for 45 minutes or until it thickens to a consistency similar to egg whites.
Remove the bowl from the refrigerator, and add 2 chopped and peeled navel oranges. Add 1 cup of diced red or Golden Delicious apples, plus 1 cup of chopped walnuts. Transfer the entire mixture to a mold or dish, and chill for about two hours or until it is firm.
Paula Deen offers a similar recipe on FoodNetwork.com. To make Paula Deen’s version, spray a square 9-inch pan with cooking spray, and combine 2 3-ounce packages of raspberry gelatin and 1/2 envelope of unflavored gelatin in a bowl. Stir in 1 cup of boiling water, stirring continuously for two minutes, and then stir in 1/2 cup of cold water. Add 1 8-ounce can of crushed pineapple, 1 15-ounce can of whole cranberry sauce and 1/4 cup of chopped walnuts. Pour the mixture into the prepared pan, cover it, and refrigerate it until it is firm.
Around an hour before serving, turn the mold upside down onto a serving platter, allowing it to rest at room temperature until the gelatin falls from the mold. In a bowl, combine an 8-ounce package of cream cheese with 1/4 cup of confectioners’ sugar, 1/4 cup chopped walnuts and 2 tablespoons of whipped cream. Spoon the mixture into the center of the mold and serve.
