A good recipe for cooking a pork roast in a slow cooker consists of adding a lightly browned pork loin roast to the slow cooker with a few seasonings. Cook the roast on low for up to 10 hours, until the meat is tender.
After trimming the excess fat from the pork roast, add it to a hot skillet containing 1 tablespoon of vegetable oil. Brown the roast on all sides. Peel and slice 1 onion and 3 cloves of garlic. Add the onion and garlic to the slow cooker, and place the browned pork roast on top. Dust the roast with 1 teaspoon of salt and 1/2 teaspoon of pepper. Pour 1 cup of chicken broth over the roast, cover and cook on low for 8 to 10 hours or until the meat is tender.
A variation that omits the browning step calls for adding the pork roast to the slow cooker, dusting it with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Peel and slice 3 sweet potatoes and one onion. Place the sweet potatoes and onion into the slow cooker with the pork roast. Sprinkle 1/2 teaspoon of salt and 1 1/2 teaspoons of thyme. Pour 4 cups of apple juice over the vegetables and roast. Cover and cook on low for 6 to 8 hours or until the meat and vegetables are tender.
