The Pioneer Woman cookbook and website do not offer a coconut pie recipe, but they do offer several other pie recipes such as pumpkin cream pie. A French coconut pie recipe is available at the Food Network website.
To make the Pioneer Woman's pumpkin cream pie, blend 15 graham cracker sheets with 1/2 cup of powdered sugar and one stick of melted butter to prepare the crust. Press this crust mixture into a pie plate. While the crust bakes at 300 degrees Fahrenheit for 10 minutes, heat one box of vanilla pudding mix in a saucepan with 1 cup of half-and-half and 1/2 cup of heavy cream. Season the mixture with a pinch each of cinnamon, nutmeg and ground cloves. Bring the mixture to a boil.
Once the pudding thickens, remove it from the heat and stir in 1/2 cup plus 3 tablespoons of pumpkin puree. While the pudding chills, beat together 2 tablespoons of brown sugar and 1/2 cup of heavy cream and fold the mixture into the pudding. Pour the filling into the crust and chill the pie overnight before serving.
To make the Food Network's French coconut pie, whip together 4 tablespoons of melted butter, two beaten eggs, 1 tablespoon of all-purpose flour, 3/4 cup of sugar and 1 cup of shredded sweetened coconut. Mix in 1 cup of milk and pour the mixture into an unbaked pie shell. Cook the pie at 350 degrees Fahrenheit for 45 to 60 minutes.
