To make Food Network's recipe, heat 3 inches of vegetable oil to 325 degrees. Peel 4 large russet potatoes and cut them into chips. Fry for three minutes and remove to a paper towel-lined plate to drain. Turn the oil temperature up to 375 degrees.
In a bowl, combine 2 cup flour, 1 tablespoon baking powder, 1 teaspoon salt, 1/2 teaspoon pepper and 1 large egg. Pour in 1 12-ounce can soda water, and whisk. Spread 1/2 cup rice flour on a plate, and dredge 2 8-ounce cod or haddock fillets that have been cut in half. Dip into the batter.
Place the chips in the bottom of a fryer basket and submerge in the oil. Drop the battered fish into the oil on top of the chips. Fry both for four to five minutes, or until crispy and brown. Remove, and drain the fish and chips. Season with salt, and serve with malt vinegar or tartar sauce.
To make tartar sauce, combine 1 cup mayonnaise, 1 tablespoon chopped capers, 1 tablespoon chopped cornichons, 2 tablespoons finely chopped flat-leaf parsley leaves, the juice of 1/2 lemon and a dash of hot sauce.Learn more about Seafood
