The ingredients for a Chinese shrimp fried rice recipe include 4 ounces of frozen, uncooked shrimp with the shells on, 4 ounces of cooked ham, 1 medium onion, 2 scallions and 2 eggs or more if desired. Stir fry these and other ingredients in a specific order.
Other ingredients are 4 cups of cold, cooked rice, 1/2 cup peas, 4 to 5 tablespoons of oil for stir-frying, or more if it's needed. The marinade for the shrimp requires 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1 teaspoon of salt, pepper to taste and 1 teaspoon of cornstarch mixed with 1 1/2 teaspoons of water.
Thaw the frozen shrimp, then pat dry, shell and remove the sand vein. Chop into pieces and add to the marinade. Marinate for about 15 minutes. Meanwhile, dice the ham, onion and scallions. Beat the eggs lightly with chopsticks, and add salt or oyster sauce. Set aside.
Heat the wok and add 1 tablespoon of oil. When the oil is hot, pour 1/2 of the egg mixture in and cook, turning over once. Cook the other half of the egg, and cut it into strips and reserve. Add two more tablespoons of oil and when it's hot, stir-fry the onion and shrimp on high heat. Remove them and reserve. Repeat for the ham and peas. Add more of the oil, turn the heat to medium, and stir-fry the rice. Add the other ingredients save the egg and scallions. Serve the rice with strips of egg and a sprinkling of scallions.
