To make Food Network's Crunchy Parmesan Chicken Tenders recipe, preheat the oven to 500 degrees Fahrenheit. Grease 2 heavy large lined baking sheets with 1 tablespoon olive oil each. Pour 1 cup buttermilk into a large bowl, and add 1 1/2 pounds chicken tenders. Stir to coat, and let stand for at least 15 minutes and up to 30 minutes. Make a vinaigrette by mashing 3 minced garlic cloves with 1/2 teaspoon salt. Whisk in 3 tablespoons balsamic vinegar and 1/2 cup olive oil. Season with pepper, to taste. Set vinaigrette aside.
Stir 1 1/4 cups freshly grated Parmesan and 3/4 cup Italian-style seasoned bread crumbs in a dish. Remove the chicken tenders from the buttermilk, and dredge in the Parmesan and bread crumbs mixture. Coat completely, pressing to adhere. Space the coated chicken tenders evenly on the baking sheets, and drizzle 2 tablespoons olive oil over the chicken. Bake for 12 minutes, or until they are cooked through and golden brown. Transfer the chicken tenders to a platter, and serve with the vinaigrette for dipping.
