Allrecipes offers a recipe for classic chicken broccoli bake using 4 skinless, boneless chicken breast halves, 1 pound cooked broccoli florets and 1 can condensed cream of mushroom soup. Place the chicken into a large pot and boil until tender. Cut the chicken into bite size pieces and place into the bottom of a greased baking dish. Layer the cooked broccoli over the chicken.
In a small bowl, combine the cream of mushroom soup with 1 tablespoon mayonnaise, and then spoon it over the chicken and broccoli. Top with 1 cup each shredded cheddar cheese and dry stuffing mix. Bake at 350 degrees Fahrenheit for 25 to 30 minutes.
Trisha Yearwood's version uses white rice. In a pot, bring 4 skinless chicken breasts to a boil in salted water, reduce heat and simmer for 45 minutes. Drain chicken and refrigerate up to 24 hours, and then shred. Boil 1 medium head broccoli, cut into bite size pieces, in salted water for two to three minutes. Spread 2 cups cooked white rice into the bottom of a baking dish and top with cooked broccoli.
In a bowl, combine the shredded chicken with 1 can cream of chicken soup, 1 cup sour cream and 1/2 cup mayonnaise. Stir in 1 tablespoon lemon juice and 1 1/4 cups shredded cheddar cheese, and then pour over broccoli layer. Sprinkle 1 1/4 cups shredded cheddar cheese on top and bake for 40 minutes at 350 degrees Fahrenheit.
