Steam the cauliflower florets until tender, then drain and mix with the cheese sauce. Add in the crumbled bacon and one clove of grated garlic, along with salt and pepper to taste. Pour the casserole mixture into a 3-quart casserole dish, sprinkling on an additional 4 ounces of shredded cheddar and 4 ounces of Monterrey Jack cheese. Cover with foil and bake at 350 degrees Fahrenheit for 25 minutes. After 25 minutes, remove the foil and continue baking until the cheese is lightly browned.
