Food Network publishes a candied carrots recipe on its website, FoodNetwork.com. The recipe is from chef Tyler Florence, host of the Food Network program “Tyler’s Ultimate.” The recipe is from the show’s “Ultimate Holiday Table” episode, requires 50 minutes total prep time and yields four servings.
To make Tyler Florence’s candied carrots, heat an oven to 350 degrees Fahrenheit, and prepare 1 bunch of young carrots with their tops by cutting of all but 1 inch off their tops, allowing a small amount of green to remain on top each carrot. Place the carrots inside a large shallow pan, adding 1/4 cup extra-virgin olive oil to the carrots and seasoning them with freshly ground pepper and sea salt to taste. Turn the carrots in the pan to coat them in the oil, and bake them in the oven for 30 minutes or until the carrots are tender when pierced with a fork.
While the carrots bake, melt 1/2 stick of butter over medium-low heat in a skillet, swirling the pan around and cooking until the butter browns. Add the zest and juice from 1 orange to the butter along with 1 tablespoon brown sugar and 1 teaspoon each cumin and cinnamon. Cook the mixture for 2 minutes or until it takes on a syrupy consistency. Take the carrots out of the oven, drizzle them with the sauce, and serve.
