A recipe for a cake similar to the Corner Bakery cinnamon creme cake is the Barbara Bakes copycat recipe, which calls for a brown sugar, cinnamon, butter and flour filling. The cake also has a crumb topping.
To make the cinnamon creme cake, whisk together 1/2 cup of sugar, 2/3 cup of brown sugar, 4 teaspoons of ground cinnamon, 1/4 teaspoon of ground nutmeg and 2 2/3 cups of flour, and stir in 2 sticks of melted salted butter until crumbles form for the topping and filling. In one bowl, whisk together 3 cups of flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda and 1/4 teaspoon of salt. Beat together 1/2 cup of softened butter, 1/2 cup of vegetable shortening and 1 1/2 cups of sugar in another bowl.
Add 5 eggs and 1 1/2 teaspoon of almond extract to the butter mixture, and then alternately fold in the flour mixture and 2 cups of sour cream. Pour half the batter into a greased and floured tube pan, add half of the topping, and pour in the rest of the batter. Sprinkle the cake with the rest of the topping, and bake the cake at 350 degrees Fahrenheit for 50 to 75 minutes.
