To make easy butterscotch haystacks, microwave 1 cup butterscotch chips and 1/2 cup peanut butter on 50 percent power for three to five minutes. Add 1/2 cup peanuts and 2 cups chow mein noodles; blend to coat noodles thoroughly. Drop by teaspoonfuls onto waxed paper.
Alternately, begin by lining trays with waxed paper. Microwave 1 2/3 cups butterscotch-flavored morsels in a large, uncovered, microwave-safe bowl on medium-high power for 1 minute, and stir. If necessary, continue microwaving in 10- to 15-second intervals, mixing just enough so that chips are melted. Stir in 3/4 cups creamy peanut butter until blended well, add 8.5 ounces chow mein noodles and 3 1/2 cups miniature marshmallows, and mix until all ingredients are coated. Drop by rounded tablespoon onto prepared tray, and refrigerate until ready to eat.
Rather than use a microwave, this same recipe may be implemented with a double boiler. Place the morsels in top of double boiler over hot (though not boiling) water. Do not cover. When the majority of morsels are shiny, stir until just melted. Ensure that water doesn't come into contact with the melted sauce. Remove from heat, blend in peanut butter, and transfer into a large bowl. Add chow mein noodles and marshmallows, then proceed as described above.
