Recipes that use buttermilk baking mix include four-ingredient pizza, garlic cheddar biscuits and cornbread. To make Waikiki cornbread, whisk together 3 cups buttermilk baking mix, 1 cup sugar, 2 1/2 teaspoons baking powder and 1/4 cup cornmeal in one bowl, and mix 3 eggs, 1 1/4 cups of milk and 1 cup of melted butter in another bowl. Combine the wet and dry ingredients into a baking pan, and bake it at 350 degrees Fahrenheit for 30 minutes.
Make four-ingredient pizza by combining 2 pouches or 15 ounces of buttermilk baking mix with 1 cup of water. Dollop the resulting dough into the bottom of a greased glass baking dish followed by 1 cup of pizza sauce, 1/2 package sliced pepperoni and 1 cup shredded mozzarella cheese. Repeat the sauce, pepperoni and cheese layers, and bake the pizza at 375 degrees for 20 to 25 minutes.
To make garlic cheddar biscuits, combine 2 cups buttermilk baking mix with 1 cup grated cheddar cheese and 1 teaspoon garlic powder in a bowl before stirring in 2/3 cup milk. Dollop the mixture in balls onto a greased baking sheet, and bake them at 400 degrees for 10 to 13 minutes. Meanwhile, stir 2 teaspoons dried oregano and 1/4 teaspoon garlic salt into 2 tablespoons melted butter. Brush the mixture over the hot biscuits, and serve.
