Mix together 1/2 cup of softened butter, 1/2 cup of chopped fresh basil, 1 tablespoon of minced shallot, 1 teaspoon of salt and 1/2 teaspoon of pepper in a small bowl. Cover and set in the refrigerator until ready to use. Set an oven rack 5 inches from the broiler and turn the broiler on to preheat.
Toss 2 pounds of chopped summer squash with one small chopped red onion and three seeded and chopped medium tomatoes. Season with 1 teaspoon of salt and 1/2 teaspoon of pepper and mix. Evenly distribute the mixture in a single layer on a jelly roll pan and broil for 10 to 12 minutes until the squash is tender and lightly browned. Stir to ensure even cooking. Transfer to a bowl, mix with 2 tablespoons of the basil butter and cover with aluminum foil.
Season four 3/4-inch-thick frenched pork loin chops with 1/2 teaspoon of salt and 1/2 teaspoon of pepper, and set them on a wire rack atop a jelly roll pan lined with foil. Scoop a tablespoon of basil butter on top of each pork chop and broil for eight to 10 minutes. The pork chops are done when the internal temperature is 155 degrees Fahrenheit. Let the pork chops rest for five minutes before serving them alongside the squash.
