Food Network has a simple and easy-to-follow recipe for breakfast quiche made with new potatoes and country ham. The recipe can be made with homemade or premade pie crust.
To make Food Network's breakfast quiche recipe, preheat the oven to 350 degrees F. In a skillet, heat 1 tablespoon vegetable oil, and saute 1/2 cup diced country ham until lightly brown. In a saucepan, add 3 new potatoes that have been sliced to 1/4-inch thick, and cover with vegetable oil. Cook over low heat for 15 minutes, or until the potatoes are tender. Remove and set aside.
In a 9-inch pie pan, roll out your favorite pie crust and pierce all over with a fork. Cover with parchment and bake fill with dried beans for 10 minutes. Let cool and set aside. In a bowl, combine 4 large eggs, 3/4 cup half-and-half and 1 teaspoon black pepper. Place the potatoes, country ham and 1/2 cup grated aged gouda in the pie crust, and pour the egg mixture on top. Sprinkle 1/2 cup grated aged gouda on top, and bake for 35 to 40 minutes on the bottom rack, or until the center sets and the top is golden. Let cool for 10 minutes.
