To make the traditional all-bran muffins, combine 2 cups all-bran cereal and 1 1/4 cups milk and let sit for 30 minutes. Beat in an egg and 1/4 cup oil, then add 1 1/4 cups flour, 1/2 cup sugar, 1 tablespoon baking powder and 1/2 teaspoon salt, then beat until combined. Pour batter into greased muffin pans and bake at 400 degrees Fahrenheit for 20 minutes.
For a variation on the traditional all-bran muffin, start by covering 1/2 cup raisins with water and microwaving for one minute, until plump. Beat together an egg and 3/4 cup milk, then add in 1 1/2 cups all-bran cereal. Let the cereal mixture sit for about five minutes or until the cereal absorbs the liquid. Mix in raisins, 1 cup whole wheat flour, 1 teaspoon baking soda, 1 teaspoon cinnamon and 2 tablespoons melted butter, along with a cored and shredded apple, a mashed banana and 1/2 cup honey. Place batter in greased muffin pans, or muffin pans with cupcake liners, and bake for 20 minutes at 375 degrees Fahrenheit.
