Bertolli doesn't provide a recipe for its popular vodka sauce, but a good recipe for homemade vodka sauce is featured at the Food & Wine website. Key ingredients of vodka sauce include olive oil, Italian tomatoes, tomato paste and vodka.
In a saucepan, cook 3 ounces diced pancetta, 3 cloves peeled garlic and 1/4 teaspoon crushed red pepper in 1/4 cup extra-virgin olive oil for five minutes, stirring occasionally. Pour in 1/4 cup vodka and deglaze pan. Add 1 tablespoon tomato paste and stir one minute. Add 1 can whole tomatoes along with juices from the can, hand crushing tomatoes ahead of time. Add 1 pinch sugar, 2 sprigs fresh basil and salt and pepper to taste.
Simmer on low heat for 30 minutes. Remove basil sprigs and garlic, and season again with salt and pepper. Stir in 1/4 cup heavy cream and simmer for five minutes. Make an easy version by cooking 1 diced onion in 1/2 cup butter until softened. Pour in 1 cup vodka and cook for 10 minutes. Add 2 cans crushed tomatoes and continue cooking for 30 minutes. Pour in 1 pint heavy cream and cook another 30 minutes.
Make a simple penne with vodka sauce dish by preparing one 16-ounce package of penne pasta according to package directions. In a 3-quart saucepan, cook 5 1/2 cups chunky garden Italian sauce, 1/4 cup vodka, 1/3 cup chopped fresh basil and 1/4 teaspoon crushed red pepper over medium heat. Bring to a boil and remove from heat. Stir in 1/2 cup heavy cream and serve over pasta. Sprinkle 1/4 cup grated Parmesan cheese on top.
