- 1 1/2 lbs. beef, top round or shell steak
- 3 tablespoons unsalted butter
- 10 ounces white button mushrooms
- 1/2 medium yellow onion
- 1 tablespoon all-purpose flour
- 1 cup beef broth
- 1 cup sour cream, at room temperature
- 2 tablespoons canola oil
- 1 tablespoon fresh chives
- Kosher salt
- Ground black pepper
