Stove-top hearty beef stew requires 1 pound of beef, 2 tablespoons each of olive oil, flour and tomato paste, 2 medium onions, 2 cloves of garlic, 1 3/4 cups of beef broth, vegetables and assorted spices. Some recommended beef stew vegetables are carrots, celery, bell peppers and potatoes.
Cut the beef into small 1-inch pieces. Heat the olive oil in a pan, and brown the meat. Remove the meat from the pan, and add in the onions and garlic. Cut the onions into quarters, and mince the garlic before adding it to the pan. Cook the onions and garlic for one minute or until the onions become translucent.
Add the 2 tablespoons of flour and cook the mixture for an additional minute. Pour in the tomato paste, and stir the ingredients to combine them. Once the ingredients are thoroughly mixed, add the beef broth, 1 bay leaf, 1/2 teaspoon of dried thyme and 1/4 teaspoon of ground black pepper. Put the beef back into the pan, cover it, and reduce the heat to low. Cook the stew for 1 1/2 hours
After the stew has cooked thoroughly, add the desired vegetables, and cook the stew for an additional 30 minutes until the vegetables are soft. Take out the bay leaf, and serve the stew immediately.
