To make Food Network's recipe, heat 1 tablespoon canola oil in a large skillet. Season 3 pounds bone-in beef chuck short ribs with salt and pepper. Brown the short ribs in batches for three to four minutes on each side, or until browned all over.
Place 1 peeled and quartered onion, 1 chopped carrot, 1 chopped parsnip and 1 chopped turnip on the bottom of a slow cooker, and season with salt and pepper. Place the short ribs on top, and add 1 peeled and quartered onion, 1 chopped carrot, 1 chopped parsnip and 1 chopped turnip. Tie together 4 sprigs rosemary, 4 sprigs thyme and 4 sprigs parsley stems. Add this bundle to the slow cooker along with 1 tablespoon Worcestershire sauce and 1 tablespoon spicy brown mustard. Add 1 12-ounce bottle of dark stout beer and enough water to almost cover the contents. Cover, and cook on low for six to eight hours, or until the meat is tender.
Remove the meat and vegetables from the slow cooker. Strain the juices, and serve alongside the short ribs. Garnish with 4 tablespoons chopped parsley leaves.Learn more about Meat
