Food Network has a simple and easy to follow recipe for beef short ribs cooked in a slow cooker. This recipe uses bone-in beef chuck short ribs, and yields four servings. To make Food Network's recipe, heat 1 tablespoon canola oil in a large skillet. Season 3 pounds bone-in beef chuck short ribs with salt and pepper. Brown the short ribs in batches for three to four minutes on each side, or until browned all over.
Place 1 peeled and quartered onion, 1 chopped carrot, 1 chopped parsnip and 1 chopped turnip on the bottom of a slow cooker, and season with salt and pepper. Place the short ribs on top, and add 1 peeled and quartered onion, 1 chopped carrot, 1 chopped parsnip and 1 chopped turnip. Tie together 4 sprigs rosemary, 4 sprigs thyme and 4 sprigs parsley stems. Add this bundle to the slow cooker along with 1 tablespoon Worcestershire sauce and 1 tablespoon spicy brown mustard. Add 1 12-ounce bottle of dark stout beer and enough water to almost cover the contents. Cover, and cook on low for six to eight hours, or until the meat is tender.
Remove the meat and vegetables from the slow cooker. Strain the juices, and serve alongside the short ribs. Garnish with 4 tablespoons chopped parsley leaves.
Savory Slow Cooker Short Ribs
Heat 2 tablespoons extra virgin olive oil in a large skillet over medium-high heat. Sprinkle 2 to 3 pounds boneless beef short ribs, or 4 to 5 pounds bone-in short ribs, with salt and pepper. Sear ribs in oil, browning all sides. Transfer to slow cooker. Add 1 quartered and sliced large onion, 1 peeled and diced large carrot and 3 sliced ribs celery to skillet. Cook until onions are lightly browned; transfer vegetables to slow cooker.
Bring 2 cups dry red wine and 2 cups chicken broth to boil in skillet. Boil until reduced by half, which takes about seven to nine minutes. Pour into slow cooker; add 1 large bay leaf and rosemary leaves, if desired. Cook, covered, on low for seven to nine hours.
For the Slow Cooker Short Ribs with Cider recipe, heat 3 tablespoons olive oil over medium-high heat in large skillet. Toss 4 to 5 pounds meaty beef short ribs in a bag with 1/2 cup all-purpose flour, 1/2 teaspoon ground thyme, 1/2 teaspoon salt and 1/2 teaspoon ground black pepper. Brown short ribs on all sides in hot oil. Add 1 large coarsely chopped onion, and cook 2 minutes longer; add to slow cooker.
Whisk together 2 cups hard or non-alcoholic cider and 1 envelope gravy mix. Pour over ribs and cook, covered, on low for eight to 10 hours or on high for five hours.
