A basic couscous dish recipe is Israeli couscous tabouli, a traditional dish that calls for couscous, tomatoes, scallions, olive oil, lemon juice and herbs. Another similar recipe, couscous salad, contains sliced cucumbers, tomatoes and scallions along with dressing made from salt, pepper, lemon juice and olive oil.
To make Israeli couscous tabouli, add 1 cup of Israeli couscous to a pot of salted, boiling water, and cook the couscous on medium heat for up to eight minutes. Once the grain turns al dente, allow it to drain and cool while making the dressing.
Combine 3 tablespoons of olive oil, the juice and zest from 1 lemon, and salt and pepper to taste in a bowl, and mix until the ingredients are well blended. Pour the vinaigrette over the couscous, and toss the grains with 1 cup of minced parsley, 1/2 cup of finely chopped cilantro, 2 tablespoons of chopped fresh mint, 2 seeded and diced tomatoes, and 3 chopped scallions. Serve the salad after allowing it to sit for 30 minutes.
Another recipe calls for adding 1 seeded and chopped cucumber to the salad and serving it with spiced mini burgers and hummus. To make the mini burgers, combine 1 pound of ground beef with 1 1/2 teaspoons of ground cumin, 1 1/2 tablespoons of dried oregano, 1 teaspoon of salt and 1/4 teaspoon of pepper, and form the mixture into 12 small patties. Cook the patties in a skillet for four minutes on each side.
