Preheat an oven to 425 degrees F. Set a Pillsbury refrigerated pie crust into a dry 9-inch glass pie plate. Press the crust firmly along the sides and bottom of the pan to set it.
Place 6 cups of peeled and thinly sliced medium apples into a large mixing bowl with 3/4 cup of sugar, 2 tablespoons of all-purpose flour, 3/4 teaspoon of ground cinnamon, 1/4 teaspoon of salt and 1/8 teaspoon of ground nutmeg. Add a tablespoon of lemon juice and gently mix the filling ingredients together. Spoon the filling into the crust and top with the second crust. Pinch the edges together to seal the pie and cut slits in the top crust to allow steam to escape during the cooking process.
Bake the pie for about 20 minutes. Remove the pie and cover the edge of the crust with 2-to-3-inch wide strips of tin foil to prevent them from overcooking or burning. Return the pie to the oven and continue to cook for 20 to 25 minutes until the apples are soft and the crust appears golden brown. Cool for at least 2 hours on a cooling rack before serving.
