To make baklava, layer filo pastry sheets and fill them with a nut mixture, bake them until crispy and then soak them in the syrup. Ingredients include 12 sheets of filo pastry, 10.5 ounces of sugar, 3.4 fluid ounces of honey, one cinnamon stick and two strips of orange zest.
Start by heating the oven to 356 F. While waiting for the oven to heat place the sugar, honey, cinnamon stick, orange zest and 1.26 cups of water in a saucepan and let it simmer for 15 minutes or until the mixture is reduced by one-third, then let it reach room temperature. Put walnuts, almonds and pistachios in a mixer until the mixture becomes coarse, then move it to a bowl and add two tablespoons of ground cinnamon and 1/2 tablespoon of ground cloves and mix all of them together.
Place four sheets of filo in the oven tray while brushing each layer with melted butter, then place half of the nut mixture on top of the four sheets. Repeat the cycle until the last four sheets are placed on top. Cut the baklava into diamond figures with a sharp knife before placing it into the oven. Bake the baklava on the middle shelf for 30 minutes or until it becomes crisp. Remove the baklava from the oven and add half of the syrup on top of it, wait five minutes, then pour the rest of the syrup. Let the baklava cool down and soak in the syrup.
