To make HiddenValley.com's ranch baked quesadillas, preheat the oven to 350 F. Combine 1 cup shredded cooked chicken, 1 cup shredded Monterey Jack cheese, 1/2 cup ranch dressing and 1/4 cup diced green chiles in a bowl. Lay out 4 9-inch flour tortillas, and divide the chicken mixture evenly between them. Fold each tortilla in half to seal in the filling. Place the quesadillas on a baking sheet, and bake for 15 minutes or until the cheese melts and the tortillas begin to brown. Garnish with salsa, guacamole and ranch dressing if desired.
For CookingWithVinyl.com's baked chicken quesadillas, preheat the oven to 350 F. In a skillet, cook 1 chicken breast with 2 tablespoons cooking oil. Shred the chicken, and add 2 tablespoons packaged taco seasoning. Add 1 chopped red bell pepper, 1 chopped onion and 1 chopped jalapeno. Cook until softened, then add 1 tablespoon cilantro and the juice of 1 lime. On a greased baking sheet, lay out 4 small tortillas. Divide 1/2 cup shredded cheddar cheese between them. Top with the chicken mixture, and another 1/2 cup of cheese. Place another tortilla on top of each quesadilla to seal in the filling. Bake for 10 minutes, flipping halfway through.
