A no-bake cookie recipe from Bon Appetit combines cocoa powder, butter, peanut butter, sugar and oatmeal to prepare a confection that is a cross between a cookie and a candy. While high in fat and sugar, these cookies are ready in just over 30 minutes and don't require an oven.
Melt a cube of butter in a saucepan over medium heat. Add 1/2 cup of milk, 3 tablespoons of cocoa powder and 1 cup of sugar. Increase the heat to high and stir while bringing the mixture to a boil. Maintain the boil for a full minute, stirring continuously. Remove the pan from the heat and stir in 1 cup of creamy peanut butter, 1 teaspoon of vanilla extract and 1/4 teaspoon of salt. Add 3 cups of quick-cooking oats and stir until well combined.
Drop the cookies by the tablespoon onto a wax paper-covered cookie sheet. Place the cookie sheet in the refrigerator for 30 minutes to set. For faster setting, place the cookie sheet in the freezer for 15 minutes. As they set, they take on a cookie-like texture.
For long-term storage of these no-bake cookies, wrap them tightly and store in a freezer. Bring them to room temperature before serving.
