A recipe for no-bake chocolate pie is the Food Network's chocolate cream pie that uses only cream cheese, cocoa powder, milk, sugar and heavy cream. Some other no-bake chocolate pies include no-bake chocolate mousse pie and chocolate silk pie.
To make a no-bake chocolate cream pie, cream together 1/2 cup of sugar, 1/3 cup of cocoa powder, 1/3 cup of milk, 8 ounces of softened cream cheese and 1 teaspoon of vanilla extract. Once the mixture has a light, fluffy consistency, spread it into a store-bought chocolate cookie crust. Then whip 1 cup of heavy cream with 2 tablespoons of sugar until peaks form, and spread it on top of the chocolate cream. Garnish with shaved chocolate, and chill.
The chocolate mousse pie uses a cookie crust made from blending 8 ounces of Italian chocolate wafer cookies in a food processor and mixing in 2 tablespoons of melted butter. Press the cookie crust into the bottom of a pie pan, and chill. Meanwhile, simmer 3/4 cups of heavy cream in a saucepan, and pour it into a bowl that contains 9 ounces of semi-sweet chocolate, 1 1/2 teaspoons of pure vanilla extract and 1 pinch of salt in a bowl. Whisk the mixture until melted and smooth, and fold in 1 1/2 cups of whipped heavy cream. Pour the mousse over the cookie crust, and chill for at least six more hours before topping with 1 1/2 cup of cream beaten with 1 teaspoon of vanilla.
