Food Network has a simple and easy-to-follow recipe for avocado deviled eggs. The recipe is flavored with lemon juice and mustard, and topped with watercress for garnish.
To make Food Network's avocado deviled eggs recipe, boil water in a large saucepan. Carefully place 12 large eggs into the water using a ladle, and reduce the heat to a low boil. Cook for 10 minutes, and drain. Remove the eggshells once cooled, and slice each egg in half, lengthwise.
Remove the egg yolks, and place into a food processor. Add 1/2 cup mayonnaise, the zest of 1 lemon, 2 tablespoons fresh lemon juice and 1 tablespoon yellow mustard, as well as 1/4 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper and 1 diced avocado. Place the egg whites cut-side-up on a dish.
Mix the ingredients until well blended and smooth, and transfer the egg yolk mixture to a resealable plastic bag. Cut a corner off the bag, and pipe the egg yolk mixture into each egg white half. Garnish each deviled egg with watercress leaves, and serve immediately. To store, cover loosely and chill. This avocado deviled eggs recipe yields 24 deviled eggs and takes approximately 25 minutes to prepare and cook.
