Betty Crocker's Applesauce Cake recipe is baked in a loaf pan for about an hour and allowed to cool before serving. The recipe combines applesauce, flour and a few spices. The cake is served plain, dusted with powdered sugar, drizzled with a caramel glaze or topped with ice cream.
Preheat an oven to 350 degrees Fahrenheit. Grease a Bundt pan with shortening and dust it lightly with flour. Toss 1 cup of raisins or cranberries, if using, with 1 tablespoon of flour and set aside.
In a large bowl, blend 2 1/2 cups flour, 1 tablespoon pumpkin pie spice, 1 1/2 teaspoon salt and 1 teaspoon baking powder together and set aside.
In a mixing bowl, beat together 1 1/2 cups white sugar and 1/2 cup of softened butter. Beat with a hand mixer for 30 seconds or until light and fluffy. Add two eggs and beat until well blended and smooth. Add 1 1/2 cups applesauce and slowly add the flour mixture. Beat until well blended and smooth. Stir in the cranberries or raisins and 1/2 cup chopped walnuts or pecans. Pour the mixture into the prepared pan.
Bake for 50 to 60 minutes or until an inserted toothpick comes out clean. Dust lightly with powdered sugar or drizzle a caramel glaze over the cake before serving.
