Betty Crocker's Easy Apple Cake is one apple cake recipe. The recipe makes eight servings, takes 25 minutes to prepare and uses fresh walnuts and apples.
To prepare the apple cake, grease and flour a round 9-inch cake pan, and preheat the oven to 350 F. Peel and shred two medium apples or enough to make 1 1/2 cups, and set them aside. Place 1/2 cup of softened butter and 1 cup of sugar together in a large bowl, and beat the ingredients with an electric mixer on medium speed until the mixture reaches a fluffy consistency. Beat two eggs into the mixture one at a time, and add 1/4 teaspoon of vanilla, 1 1/4 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of ground cinnamon and 1/4 teaspoon of salt.
Stir in 1/2 cup of chopped walnuts and the shredded apples, and spoon the batter into the prepared pan. Bake the mixture for 40 to 45 minutes or until a toothpick comes out clean after piercing the center. Cool for 10 minutes, and place the cake pan on a wire cooling rack for an additional 10 minutes. Slice the cake, and serve warm with scoops of ice cream. Also feel free to cool the cake and serve it dusted with powdered sugar.
