To prepare the apple cake, grease and flour a round 9-inch cake pan, and preheat the oven to 350 F. Peel and shred two medium apples or enough to make 1 1/2 cups, and set them aside. Place 1/2 cup of softened butter and 1 cup of sugar together in a large bowl, and beat the ingredients with an electric mixer on medium speed until the mixture reaches a fluffy consistency. Beat two eggs into the mixture one at a time, and add 1/4 teaspoon of vanilla, 1 1/4 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of ground cinnamon and 1/4 teaspoon of salt.
Stir in 1/2 cup of chopped walnuts and the shredded apples, and spoon the batter into the prepared pan. Bake the mixture for 40 to 45 minutes or until a toothpick comes out clean after piercing the center. Cool for 10 minutes, and place the cake pan on a wire cooling rack for an additional 10 minutes.
