Food Network provides an ambrosia salad recipe from Alton Brown, host of the Food Network show “Good Eats.” The recipe calls for ingredients such as heavy cream, miniature marshmallows, sour cream and Clementine orange segments.
To make ambrosia salad, place 1/2 cup of heavy whipping cream and 1 tablespoon of sugar in the bowl of a stand mixer. Use the stand mixer’s whisk attachment to whip the cream until stiff peaks form. Add 4 ounces of sour cream to the mixture, and whisk again to combine.
Add 3 cups of mini marshmallows, 1 cup of Clementine orange segments, and 1 cup each of chopped fresh pineapple, freshly grated coconut and chopped toasted pecans. Also add 1/2 cup of drained maraschino cherries. Stir well to combine all of the ingredients, and then transfer the mixture to a glass serving bowl. Cover the bowl, and refrigerate it for at least two hours prior to serving.
An alternate recipe calls for whipping 1 pint of whipping cream with 2/3 cup of sugar and 1 tablespoon of vanilla. Add 3 cans of drained fruit cocktails, 2 cans of drained mandarin oranges, 2 packages of miniature marshmallows, 1/2 package of flaked coconut, 1 cup of crushed walnuts and 4 to 5 sliced bananas. Mix well, and let the salad chill for at least 30 minutes prior to serving.
