To make ambrosia salad, place 1/2 cup of heavy whipping cream and 1 tablespoon of sugar in the bowl of a stand mixer. Use the stand mixer’s whisk attachment to whip the cream until stiff peaks form. Add 4 ounces of sour cream to the mixture, and whisk again to combine.
Add 3 cups of mini marshmallows, 1 cup of Clementine orange segments, and 1 cup each of chopped fresh pineapple, freshly grated coconut and chopped toasted pecans. Also add 1/2 cup of drained maraschino cherries. Stir well to combine all of the ingredients, and then transfer the mixture to a glass serving bowl. Cover the bowl, and refrigerate it for at least two hours prior to serving.
An alternate recipe calls for whipping 1 pint of whipping cream with 2/3 cup of sugar and 1 tablespoon of vanilla. Add 3 cans of drained fruit cocktails, 2 cans of drained mandarin oranges, 2 packages of miniature marshmallows, 1/2 package of flaked coconut, 1 cup of crushed walnuts and 4 to 5 sliced bananas. Mix well, and let the salad chill for at least 30 minutes prior to serving.Learn more about Cooking
