To bake almond crescent cookies, mix flour with butter, sugar and almonds, add vanilla extract and almond extract, and beat thoroughly. Shape the cookie dough into a crescent shape, such that the middle is thicker than the ends, and bake for about 15 minutes on cookie sheets.
First, preheat the oven to 350 F. To bake 45 cookies, start with 1 cup each of unsalted butter and granulated sugar, and beat them together with a mixer. Then mix in 1 teaspoon of vanilla extract and 2 teaspoons of almond extract. Finally, add 2 1/3 cups of flour and 1cup of ground almonds and stir all the ingredients together.
After working the dough until firm, take about 1 tablespoon of dough at a time, and shape into crescents by first forming a thick strand which tapers at the ends. Then take this dough log, and bend into the crescent shape.
Next spray several cookie sheets with cooking spray, and bake the cookies in the oven for 12 to 15 minutes until light brown. After cooking, place 1 cup of powdered sugar into a small and shallow bowl, and roll the warm cookies in the powdered sugar. Finally, cool the baked cookies, and serve.
