One 7 Up pound cake recipe from About.com has a high user rating and requires traditional ingredients such as shortening, butter, sugar, flour and eggs. Lemon extract and 7 Up give the cake its signature citrus flavor.
Preheat the oven to 300 degrees Fahrenheit. Grease and flour a Bundt cake pan. This is the ideal type of pan, but use a different type if no Bundt pan is available. In a bowl, cream together 2 sticks of butter or margarine and 3 cups of sugar. Add 5 eggs one at a time, beating the mixture thoroughly after adding each one. Add 1 teaspoon of lemon extract. Next, take 3 cups of all-purpose flour and an 8-ounce bottle of 7 Up, and add them to the mixture. Alternate between the two ingredients, mixing well after each addition.
Bake for 1 1/2 hours or until the middle is done. You can also make this recipe using 2 teaspoons each of lemon zest and vanilla extract for additional flavor. 7 Up pound cake is best served fresh, but will keep overnight if refrigerated in an airtight container. One serving suggestion is to sprinkle powdered sugar over the top of the finished cake and to plate it with whipped cream and fresh berries.
