Some Rachael Ray Italian meatball recipes include spaghetti and meatballs and meatballs three ways, in which meatballs are served in sliders, with tomato sauce and pasta, and as an entrée. Some ingredients in the recipes include ground beef, ground pork, Italian bread crumbs and grated Romano cheese.
To make meatballs three ways, soak 1 cup of torn, stale bread pieces in milk. Place 1 pound of ground beef and 2/3 pound of ground pork in a mixing bowl, and season with salt and pepper. Add 2 cloves of minced garlic and 1/2 cup of grated Pecorino Romano cheese. Remove the bread pieces from the milk, squeeze out the excess liquid, and add the bread to the meat mixture. Add 1/8 teaspoon of freshly grated nutmeg, 1 egg, a handful of finely chopped fresh flat leaf parsley and a drizzle of extra virgin olive oil to the bowl, and mix well.
To prepare the meatballs with tomato sauce and pasta, form small, bite-sized meatballs. Bring the tomato sauce to a low simmer, and add the meatballs. Simmer for 12 to 15 minutes, or until the meatballs are cooked through. Remove the meatballs, and toss the cooked pasta in the sauce. Top the pasta with the meatballs and some grated Parmigiano Reggiano cheese, and serve immediately.
