Rachael Ray's recipe for southwest turkey burgers includes turkey bacon and ground turkey breast. The seasoning for the burger patties includes garlic, onion, bell and jalapeno peppers, thyme and cumin.
Finely chop two cloves of garlic, 1/4 of a red onion, 2 tablespoons of fresh thyme leaves and 2 tablespoons of cilantro leaves. Seed and finely chop 1/2 small bell pepper and one serrano or jalapeno pepper. Combine the vegetables with 1 1/3 pounds of ground turkey breast and season with 2 teaspoons of ground cumin, 1 to 2 teaspoons of hot sauce, 2 teaspoons of a grill seasoning blend, and salt and pepper to taste. Divide the meat into four equal mounds and form into patties. Drizzle with vegetable or olive oil.
Cook eight slices of turkey bacon over medium-high heat in a large nonstick pan until they become crisp. Remove excess grease from the pan and return to the heat. Cook the burger patties in the skillet over medium-high heat for five to six minutes on each side. Place one or two slices of pepper jack cheese over each patty in the last two minutes of cooking.
Place the cooked burgers onto split Kaiser rolls. Spread sweet red pepper relish on the top half of the rolls and top with red leaf lettuce. Place two slices of bacon on each burger.
