A quick and easy sauce option for salmon is parsley and cream fish sauce. The recipe serves three and is ready in approximately 15 minutes. Another easy to cook sauce is lemon sauce. Spiced with cayenne pepper, the lemon sauce recipe serves eight and should be ready in 10 minutes. Avocado and yogurt sauce is also easy to make and pairs well with salmon.
To make the parsley and cream fish sauce, blend 1 egg yolk, 3 tablespoons dried parsley, salt and pepper. Add the juice from half a lemon, and beat until homogeneous. In a saucepan, mix 125 milliliters of melted clarified butter with 250 milliliters double cream. If the sauce gets too thick, add a little boiling water to loosen it; if it gets too runny, add flour using a teaspoon until it is of desired consistency.
To prepare lemon sauce, melt 2 tablespoons of butter in a saucepan over medium heat. Whisk in 4 tablespoons all-purpose flour and stir until smooth. Then, gradually stir in 175 milliliters milk, and let it boil over medium heat as you stir constantly. Cook until thick, or for about 2 minutes. Remove from the heat, then add lemon juice, salt and cayenne pepper.
To make the yogurt and avocado sauce, mash 2 avocados, 2 cloves of garlic, 3 tablespoons Greek yogurt and 1 tablespoon fresh lemon juice in a bowl. Season with salt and pepper.
