To make easy cabbage rolls, boil and drain 12 cabbage leaves in salted water for three minutes, and mix together 1 pound of cooked ground beef, 3/4 cup of cooked rice, 1/2 cup of finely chopped onion, 1 egg and 1/4 cup of milk. Season the mixture with 1 1/2 teaspoons of salt and 1 teaspoon of pepper, and spoon it into the cabbage leaves. Roll the leaves up with the ends folded in, and secure them with toothpicks. Top the rolls with a sauce made from 1 8-ounce can of tomato sauce, 1 14.5-ounce can of undrained diced tomatoes, 1/2 cup of water, 2 tablespoons of vinegar and 3 tablespoons of sugar. Bake at 350 degrees Fahrenheit for 60 minutes.
To make Vegetarian Cabbage Rolls, saute 1 cup of chopped carrots and onions each in 1 tablespoon of butter. Stir in 1 1/2 cups of brown rice, 1 cups of broth and 1 tablespoon of lemon juice. Season with 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 1/4 teaspoon of cumin and 1/4 teaspoon of celery seeds. Simmer for 15 minutes, stir in 6 ounces of cheese and roll the filling into the cabbage leaves. Bake the rolls covered at 375 degrees for one hour, and bake uncovered for another 30 minutes.
