To make potato kugel quickly, mix eggs, oil, flour, salt and pepper; grate potatoes and onions; add them to the mix; and bake the ingredients for an hour. Jamie Geller offers versions of this recipe for individual potato kugel cups and round kugel pie.
For the regular recipe, preheat the oven to 400 degrees Fahrenheit. Use 6 eggs, 1/2 cup of oil, 4 tablespoons of flour, 1 rounded teaspoon of salt and 1/2 to 1 teaspoon of pepper. Grate 8 potatoes and 2 onions in a food processor or by hand, let them stand for a few minutes, and then squeeze out any liquid. Mix everything together until smooth, and then bake it in a 13-by-9-inch baking dish until the top is golden-brown and an inserted knife comes out clean.
Jamie Geller's recipe calls for 6 6-ounce Pyrex glass dessert dishes or a 9-inch round glass baking dish. Preheat the oven to 425 degrees Fahrenheit. Measure out 3/4 cup of oil, and use 1/2 of it to oil the glass containers. Place them in the oven to heat.
Beat 3 eggs, and add 2 teaspoons of salt and 1/2 teaspoon of black pepper, mixing well. Peel potatoes, and place them in a bowl of cold water to keep them from browning. Heat the rest of the oil in a small pot over medium-low heat. Use a food processor to slice the potatoes and onions to shoestring thickness. Put them in a large bowl, add the eggs and the heated oil, and mix well, removing any large chunks.
Take the dish or cups out of the oven, pour the mixture into the dish or cups, and bake it for one hour. The tops should be crunchy and the sides golden-brown.
