In a crock pot, place 1 pound beans, 1/2 pound cooked, chopped ham, 1/2 cup brown sugar, 1 tablespoon onion powder, 1 tablespoon parsley, 1/2 teaspoon garlic salt, 1/2 teaspoon pepper, 1/4 teaspoon cayenne pepper and water to cover everything by 2 inches. Simmer on low for 12 hours.
Before making ham and beans in the crock pot, make sure to soak the beans in water overnight, or cover the beans with 2 inches of water in a saucepan, boil for 3 minutes and let sit for 1 hour. The beans should be rinsed before placing them in the crock pot.
For a shorter ham and beans crock pot recipe, add 1 pound beans, three peeled and sliced garlic cloves, 1 large chopped onion, 1/2 teaspoon salt and pepper, 1 tablespoon parsley, 1/4 teaspoon cloves, 1 pound smoked ham and 6 cups water or broth to the crock pot. Cook on low for 8 hours and skim any extra fat before serving.
For a ham and beans recipe using ham bone, combine one meaty ham bone or four to six ham hocks, one large chopped onion, two chopped celery stalks, one shredded carrot, two bay leaves, 1 tablespoon minced garlic, 1 pound beans, 6 to 8 cups chicken broth and 1/2 teaspoon pepper in the crock pot. Stir all ingredients and cook on low for 8 hours. After about 6 to 7 hours, remove ham meat from the bones, throw out the bones and add the meat back to the crock pot.
