A quick recipe for hash brown casserole consists of a package of frozen hash brown potatoes, butter, salt, condensed cream of chicken soup and a few other ingredients. This recipe serves four to six people and is ready to eat in 45 minutes.
To make the hash brown casserole, preheat the oven to 350 degrees Fahrenheit. Coat a 9-inch by 13-inch baking pan with nonstick spray or butter. In a large bowl, add a 2-pound package of thawed hash brown potatoes, 1/2 cup softened butter, 1 teaspoon salt, 1/2 teaspoon ground black pepper and 1/2 cup chopped onions. Also add a 10.75-ounce can of condensed cream of chicken soup and 2 cups shredded cheddar cheese. Mix these ingredients until combined, and then pour the mixture into the baking dish.
Bake for about 35 minutes until the casserole is golden brown on top. Let it cool for about five minutes before serving. To save time, thaw the frozen potatoes in the microwave for a couple of minutes before preparing the dish. For milder flavor, decrease the amount of onion, or leave it out completely. For added texture, crush some corn flakes, and add them to the top of the casserole during the last 10 minutes of baking.
