A quick broccoli salad recipe consists of broccoli, bacon, onion, cheddar cheese and a few other ingredients. This recipe takes 15 minutes to make and serves six to eight people.
To make the broccoli salad, trim the leaves off the broccoli stem. Remove the tough stalk at the end and wash the broccoli head very well. If you prefer to not use raw broccoli, instead blanch it for 30 seconds, then place it in ice water and dry it completely before continuing with the recipe. Cut the broccoli into flowerets and the stem into small pieces. Place the broccoli pieces into a large bowl.
Add 6 to 8 slices of crumbled bacon, 1/2 cup of chopped red onion, 1/2 cup of raisins and 8 ounces of sharp cheddar cheese cut into small chunks into the bowl. In a smaller bowl, combine 1 cup of mayonnaise, 2 tablespoons of white vinegar, 1/4 cup of sugar and 1/2 a cup of halved cherry tomatoes. Stir these ingredients together and add them to the larger bowl, tossing gently. Season with salt and pepper to taste.
To make a healthier version of this recipe, instead use 1/8 cup of sugar and 3/4 cup of mayonnaise.
