Jenny Jones's quick and easy flatbread and Pillsbury's quick and easy herb flatbread are some quick flatbread recipes. The former recipe makes a basic flatbread, while the latter uses Parmesan cheese and herbs to make a pizza-like bread.
To make Jenny Jones's recipe, combine 1 1/4 cups of flour, 1 teaspoon of yeast and 1/2 teaspoon of salt in a bowl. Add in 1/2 cup of warm water and 2 teaspoons of olive oil, and beat for one minute. Place the dough on a floured surface, cover it with a towel, and let it sit for 10 minutes. Divide the dough into four pieces, and mold each piece into a ball. Press the dough balls down to create 6-inch circles, and cook them on an ungreased, preheated pan for one minute on each side.
For the Pillsbury recipe, unroll 1 can of Pillsbury refrigerated classic pizza crust on a cookie sheet sprayed with non-stick cooking spray. In a bowl, combine 1 tablespoon of olive oil, 1/2 to 1 teaspoon of dried basil leaves, 1/2 to 1 teaspoon of dried and crushed rosemary leaves, and 1/2 teaspoon of minced garlic. Brush the mixture over the dough, and sprinkle it with 1/8 teaspoon of salt. Chop and crush a tomato, and spread it over the dough. Bake the bread at 425 F for five to nine minutes, remove it from the oven, and sprinkle it with 1/4 cup of shredded Parmesan. Bake it for an additional two to three minutes.
