Some quick and easy taco recipes include beef tacos, fish tacos and soft vegetable tacos. The basic ingredients to use are a protein, taco shells and vegetables.
To make beef tacos, cook 1 pound of beef over medium heat for 8 to 10 minutes, stirring occasionally. Drain the beef, and stir in 1 cup salsa. Heat the mixture to boiling, reduce heat to medium-low and cook for five minutes, stirring occasionally. Heat 10 taco shells, and serve them with the beef mixture, 1/2 head lettuce, 1 tomato and 1 cup shredded Cheddar cheese.
To make fish tacos, bake 1 package breaded fish fillets as directed on the package. Cut the fillets into bite-size pieces, and heat 12 taco shells. Mix 1/2 cup of mayonnaise and 1 package of taco seasoning in a bowl, and stir in 6 cups of coleslaw mix. Let it stand for five minutes, and fill shells with fish pieces and coleslaw mixture. Top with taco sauce.
To make soft vegetable tacos, saut? 1 2/3 cups corn, 1 chopped zucchini and 1 onion in 1 tablespoon canola oil until tender. Stir in 1 can drained black beans and 1/4 cup salsa, and cook over medium heat for three to four minutes, stirring occasionally. Spoon 1/3 cup of the mixture onto half of each tortilla, and top with 1/2 cup sour cream and 1 cup shredded cheddar cheese. Fold the tortilla over the filling to finish.
