Paula Deen offers a quick and easy recipe for French fried potato balls. Preparation begins by assembling 1 cup of mashed potatoes, 1 cup of flour, 1 teaspoon of baking powder, 1 teaspoon of salt, an egg and 5 tablespoons of milk. Add the ingredients to a large mixing bowl in the order listed and combine. Scoop the mixture into a tablespoon to form small balls, and drop the mixture into a hot deep fryer set to 360 degrees Fahrenheit.
When the balls are golden brown, remove them from the deep fryer and drain. Serve the potato balls hot. Prior to serving, the balls may be sprinkled with seasoning to taste. Alternatively, serve them with a drizzle of maple syrup.
For a variation on traditional potato balls, substitute 3 pounds of sweet potatoes for the mashed potatoes. Add butter, salt, cinnamon and nutmeg. Bind the mixture with an egg. Chill the mixture until it is firm. Once it reaches the desired consistency, roll the sweet potato mixture into balls, and stuff two or three miniature marshmallows into each ball. Coat the balls with crushed gingersnap crumbs, and place them on a lightly greased baking sheet. Bake them in a 400-degree oven for 10 to 15 minutes.
